Recipes worth trying over Spring Break

Cheesecake Brownies:

What you’ll need: 1 package of brownie mix

     1 (8 oz.) package cream cheese

     1 egg

     1/3 cup white sugar

Directions:

  1. Preheat oven to temperature directed on brownie mix package.

  2. Prepare brownie mix as directed by the manufacturer.

  3. Grease a 9×13 in. pan.

  4. Pour the brownie batter into the pan and spread it out evenly.

  5. Beat together the egg, cream cheese and sugar until smooth.

  6. Scoop the mixture into the brownie batter and swirl them together using a knife or spatula.

  7. Bake according to manufacturer and check when they’re done using a toothpick.

  8. Let them cool and enjoy.

Lime and Cilantro Chicken:

What you’ll need: 3 boneless, skinless chicken breasts

     3 or 4 Limes

     4 to 6 cloves of Garlic

     Olive Oil

     Cumin

     Cayenne or Chili powder

     ¼ cup snipped Cilantro

Directions:

  1. Mince the garlic, and zest one of the limes, add them both into a small bowl.

  2. Pour olive oil into a skillet or pan, but only so it barely covers the bottom. Turn the heat up to a medium temperature. When it’s hot, almost smoking, add the chicken breasts and let them cook undisturbed.

  3. Once the chicken has browned slightly on the bottom, sprinkle it with chili powder/cumin. Let it cook for another couple minutes.

  4. Turn over the chicken and let it cook for another few minutes until its browned. Bring down the heat and add the garlic/lime mixture.

  5. Stir it a little, but be careful not to let the garlic burn.

  6. Once the chicken is fully cooked add lime juice and stir everything around.

  7. Take the chicken out of the pan and sprinkle it with cilantro.

  8. Serve with a lime wedge and some rice.

Sweet Potato Wedges:sweet potatoes

What you’ll need: 4 sweet potatoes

2 tablespoons olive oil

Salt and pepper (for taste)

Directions:

  1. Preheat the oven to 400 degrees F. Line two baking sheets with aluminum foil.

  2. Cut the sweet potatoes length-wise so they’re in thick strips.

  3. Place the strips into a bowl and drizzle with olive oil, tossing them around so it covers all of them.

  4. Arrange the strips on the baking sheets and bake for 10 to 15 minutes.

  5. Turn the potatoes over and bake for another 10 to 15 minutes.

  6. Season with salt or pepper and enjoy.

Pizza Puffs:

What you’ll need: ¾ cup flour

¾ tsp baking powder

½ tsp garlic powder

¾ cup milk

1 egg, slightly beaten

4 oz shredded mozzarella cheese

½ cup pizza sauce

Directions:

  1. Preheat the oven to 375 degrees F. Grease a 24-cup mini muffin pan.

  2. In a large bowl whisk together the flour, baking powder and garlic powder.

  3. Add in the milk and egg. Stir in the mozzarella and add any type of pizza topping you deem fit.

  4. Separate the batter into the muffin cups. Bake for around 20 minutes, or until they’re puffed and golden-brown.

  5. Microwave the pizza sauce in a bowl and use as dip.
