Healthy but Hearty: Chicken with Mushroom Cream Sauce

Looking for a healthy yet delicious dinner tonight? You have come to the right place. This savory meal consists of a flavorful chicken breast with a rich and creamy mushroom sauce. With easy-to-find ingredients and simple steps, this recipe takes only 30 minutes. Best of all, it is only 275 calories and will surely fill your stomach!

Ingredients

  • 2 (5 ounce) boneless chicken breasts
  • Salt and pepper
  • Optional: 4-6 oz. seafood such as scallops or salmon, or as much as desired
  • 1 cup thinly sliced shiitake mushroom caps
  • ¼ cup of low-sodium chicken broth
  • 2 tablespoons of heavy cream
  • Optional: 2 tablespoons of minced fresh chives or scallions

Procedure

  1. Season the chicken with a few shakes of salt and pepper.
  2. Cook the chicken on a medium-sized skillet over 165°F for about 12 to 16 minutes, turning once or twice to make sure that it doesn’t burn.
  3. In a new pan, cook the mushroom caps and seafood for about 2 minutes. Pour in the broth and simmer for about 1-2 minutes.
  4. Stir in the cream and cooked chicken. Cook the entire dish for a final 1-2 minutes.
  5. If desired, add scallions or chives as a garnish on your meal. Enjoy!
