Do you want extra energy to get you through these last weeks before winter break? Do you want to stay healthy and feel good while eating some delicious food? If you answered yes to either of these questions, try these power recipes that will get you in the mood for the colder months and the holiday season! You can make all of these on the weekend when you have more free time and bring them to school during the week!

The first recipe that will boost your energy is homemade Granola. This is great because it has several ingredients that pack a nutritional punch such as oats, which are whole grains and great carbohydrates, and nuts, which are a great source of energy that will sustain you throughout the day. You can pair this with Greek Yogurt for extra protein, Almond milk as a homemade cereal alternative, or eat it alone as a delicious snack!

What you will need:

2 cups of rolled oats

1 cup of raw nuts (pecans, walnuts, cashews, almonds)

¼ cup raw pumpkin seeds (optional)

¼ cup shaved coconut

2 tablespoons honey

2 tablespoons coconut oil

½ teaspoon vanilla or almond extract

¼ cup almond or peanut butter

1 pinch of salt

 

Instructions:

Preheat oven to 300 degrees

Combine all ingredients in a bowl and mix with your hands or spoon

Spread mixture on a baking sheet

Bake for 10 minutes or until toasted

Keep for up to 2-3 weeks

 

Instead of eating apple pie during the holidays, why not eat Warm Cinnamon Apples? This recipe is great because you can eat apple pie without the outrageous amount of sugar and buttery crust. Apples have natural sugar, which will give you a lot of lasting energy throughout the day. You can also add your homemade granola to substitute the crust of an apple pie or some Greek yogurt. And if you really have a sweet tooth you can pair the apples with some cold vanilla ice cream.

What you will need:

2-3 honey crisp apples

1 ½ teaspoons of cinnamon

¼ cup sugar or raw sugar

2 tablespoons of lemon juice

 

Instructions:

Pre-heat oven to 350 degrees

Chop and core your apples roughly into chunks

Combine chopped apples, cinnamon, sugar, and lemon juice together

Place apples on a cookie sheet or baking dish

Bake for 30 minutes or until tender

The last power recipe that will get you in the fall spirit is a Pumpkin Spice Smoothie. Because we live in Sothern California and it tends to stay warm, you may want something to put you in the fall spirit and cool you down at the same time.

What you will need:

1 cup of ice cubes

1 ½ cups of almond milk

½ banana

3 tablespoons of pumpkin puree

½ teaspoon of pumpkin pie spice

1 ½ tablespoons of honey

 

Instructions:

Combine all of your ingredients in a blender until smooth

Enjoy your fall smoothie!
