Given that many of us are still mostly restricted to our homes, we have a lot of time to get creative with our foods, so the following are some breakfast and lunch ideas (that are a little more complex than opening up a new tub of goldfish). Enjoy!

The first recipe is delicious, yet super quick! It’s a fruity waffle parfait, and you only need six different ingredients.

  • Ingredients
      • ½ a cup of waffle mix 
      • ½ a cup of almond butter (or peanut butter)
      • 1-2 cups of yogurt– the flavor of your choosing!
      • 1 large banana 
      • 5-7 fresh strawberries 
      • ¼ a cup of maple syrup
    • Directions 
      • Step #1 → Add in ¾ a cup of water with ½ a cup of the waffle mix until you have formed a thick liquid. Then, put the mix in your waffle machine when ready. 
      • Step #2 → Thinly slice the banana and strawberries into four smaller pieces. When ready, take the waffle out of the machine, let cool for two minutes, and then cut into bite-sized pieces.
      • Step #3 → Now, take the bowl or cup you will use and start layers! On the bottom, put the yogurt of your choice, then the maple syrup, then the strawberries and banana, and on the top layer on the bite-sized waffle with the almond butter (or peanut butter).
  • Tips
    • Quick Tip → If you want to make it even better with a fourth step, leave it in the refrigerator to cool for 7-10 minutes when done preparing. Trust me– it makes it 100x better!!

The second recipe is best suited for lunchtime (or even a midnight snack to take a break from the homework) and it is a chicken cucumber pita sandwich. For a meatless sandwich, replace the chicken with 1 can of chickpeas. This recipe takes 15-20 minutes and requires several tasty ingredients: 

  • Ingredients
      • 2 cups cubed cooked chicken breast 
      • 1 large cucumber
      • 1 can (¼-2 ounces) sliced ripe olives
      • 1 medium tomato
      • 1 small sweet red pepper
      • ½ a  cup cubed cheddar cheese 
      • ¼ a cup chopped red onion
      • ½ a cup ranch salad dressing 
      • ¼ a cup mayonnaise 
      • 1 tablespoon Italian salad dressing 
      • ¼ a teaspoon garlic powder
      • ¼ a teaspoon pepper 
      • 12  pieces of pita bread
  • Directions
      • Step #1 → On a cutting board, thinly slice the cucumber, cut the cheddar cheese (in a cube shape), cut the tomato (in a cube shape), chop the red onion (in a cube shape), and lastly, slice the chicken breast (in a cube shape).

      • Step #2 → In a bowl, combine all of the ingredients from step #1, along with the 1 can of sliced ripe olives. 
      • Step #3 → In another bowl, combine ½ a cup ranch salad dressing, ¼ a cup mayonnaise, 1 tablespoon Italian salad dressing, ¼ a teaspoon garlic powder, and ¼ a teaspoon pepper.
      • Step #4 → Lastly, cut the 12 pieces of pita bread into halves and open them up. Combine the mixed ingredients from the first bowl with the mixed ingredients from the bowl for the dressing. & you are good to go– enjoy!
  • Tips
    • Quick Tip → Heat the pita bread in the microwave for 20-30 seconds or on the stove for 15-20 seconds on medium-high heat, so that it is easier to open without ripping.
